There is no reason the Kosher consumer should not be able to get the same great product that the non-kosher consumer gets. That is why we go out and find award winning manufacturers, and convince them (when possible) to work with us to make their product kosher. The truth is having a hechsher is not always a good move for smaller manufacturers, the cost of "being kosher" may be more than these companies want to shoulder full-time. But to do this on a part-time basis, when they are not asked to pay the cost of the hechsher, most seem to be OK with.
Yes as the kosher consumer you are being asked to pay more for a product than the companies other customers. But then again, you get to enjoy a product that ordinarily you would not be able to.
